Wenn man «Glück» hat, bekommt man sogar saure Stutenmilch angeboten – sie ist sehr gewöhnungsbedürftig.

Nous sommes restés plusieurs jours au sein de cette famille installée près d’un magnifique lac et avons pu observer encore mieux leur mode de vie et les particularités de leur quotidien. La yourte est une véritable «pièce à tout faire». Lorsqu’on y regarde de plus près, on y voit un gros morceau de viande séchée placé au pied du canapé. À gauche, dans la zone réservée à la cuisine, de la crème au lait de yak est placée dans un bol bleu et du beurre de lait de yak est stocké sous le lit. Ce beurre nous est également proposé, en tant que visiteurs, accompagné d’un thé au lait qui n’a pas beaucoup de goût, mais qui rassasie. Comme il est salé, on peut également y tremper des aliments secs. Si l’on a de la «chance», on se voit même proposer du lait de jument, dont la saveur est très particulière.

Ci siamo trattenuti diversi giorni da questa famiglia che abita vicino ad uno splendido lago e abbiamo dunque capito qualcosa in più della loro vita quotidiana e delle sue particolarità. La yurta è la „stanza multifunzione” per eccellenza. Se la si osserva da vicino, si vede un grande pezzo di carne secca fissato sulla gamba del divano. Accanto a sinistra, nella zona della cucina, c’è un bidone blu che contiene la panna di yak e sotto il letto si trova il burro fatto con il latte di yak, che è stato offerto anche a noi visitatori insieme al tè al latte, non particolarmente saporito, ma comunque nutriente. Dato che ha un sapore un po’ salino, ci si possono intingere anche i cibi essiccati. Se si ha „fortuna”, si potrà anche assaggiare il latte di giumenta, non particolarmente piacevole di primo acchito.

L’acidificazione delle acque e del terreno é provocata principalmente dalle precipitazioni atmosferiche rese acide dalle emissioni di ossidi di azoto (soprattutto dai veicoli a motore) e di ossidi di zolfo (provenienti principalmente dalla combustione dei prodotti petroliferi e del carbone). Queste sostanze, combinandosi con il vapore acqueo nell’atmosfera, producono precipitazioni acide, che dilavano i nutrienti dal suolo e alterano gli ecosistemi lacustri. In un lago gravemente acidificato, la maggioranza delle specie animali e vegetali muore e sopravvivono solo poche specie come muschi, alghe verdi e poche specie di insetti. In provincia di Bolzano i laghi, dopo un periodo di massima esposizione ai carichi inquinanti attorno agli anni 1980, subiscono ora l’influenza di carichi acidi moderati che, grazie al sufficiente potere tamponante delle acque lacustri locali, non causano danni apparenti.

We wander around one of the villages. The bus runs four times a day, but only if you call in first. A sign points the way to the post office, the doctor and the library, all of which are typically located in the same building. Värska and Petseri are at the center of Seto life. For centuries, this ethnic minority has lived in the borderlands, undisturbed by German or Russian occupiers. Aare and Rieka Hõrn, cultural ambassadors of the Seto, invite us into their cozy home for pancakes with sour cream and smoked meat so tender you could almost suck it through a straw. The couple have plenty of stories to tell, and the table is piled high with books, photos and recipes. In between courses, they serve us home-brewed spirits. Seto culture is a happy mix of orthodox Christianity and natural religion, and the Seto are proud of their independence. “We have learned to live outside borders,” says Aare. Does he consider himself European? “Small units are more important to us. This is Setomaa. It’s like Wales, or Swabia.” He refills our glasses, always from the right, always clockwise. He doesn’t join us at the table but instead sits beside it, in Seto tradition. We are unaware that the polite way to refuse more drink is to say: “It looks like water! Drink it yourself!” By the end of the evening we are quite tipsy, whereas our host is not.
