Igual que un niño en la escuela, en nuestro restaurante partimos de las bases de la cocina tradicional, guisos pausados, brasas de leña de roble, repostería artesana... y adaptamos los platos a los tiempos actuales, utilizando las nuevas técnicas de la cocina moderna y empapándonos con lo bueno que viene de fuera, cogiendo sustancia, creciendo... hacemos una cocina eminentemente gallega, influenciada por todo aquello que nos rodea y nos enriquece.

was an old book used to learn to write. Just as a child at school, in our restaurant we take the foundations of traditional cuisine, slow cooked stews, oak-wood grills, artisan pastries etc., and we adapt these dishes to modernise them, using new techniques of modern cuisine and absorbing the best from abroad, taking shape, growing . Our food is emphatically Galician, influenced by all that surrounds and enriches us. Our border location undeniably leaves it mark on Silabario's menu and living on the border means that our restaurant makes small nods to the neighbouring country.
