La forma de cocción más primitiva que se conoce se realizaba a fuego abierto, como increíblemente se ha hecho en el pueblo cercano a Euskal Herria, Ordizia, en El Bearne, hasta el siglo XIX. Según el investigador R. Coquerel, sobre un área de unos dos metros de diámetro y sobre un suelo arcilloso o compuesto de pequeñas piedras, se extendía una capa de paja bien seca.

The earliest means of firing we know of consisted of firing the vessels over an open fire. Amazingly, this procedure was still used up until the nineteenth century in a town near the Basque Country-Ordizan, in the province of Bearne. R. Coquerel says that a layer of dry straw was laid on an area about two metres in diameter on clay ground or gravel. A few thin branches were placed on top. A covering of ferns and unfired vessels was placed on top of these. This was followed by another layer of ferns and more vessels, and so until, to form a cone. The potters then set fire to the entire pile. Once the pieces had been fired, the heap was covered in ashes and sods to ensure slow cooling.

Le mode de cuisson connu le plus primitif se réalisait à feu ouvert, comme de manière incroyable cela s'est fait dans un village proche du Pays basque, Ordizan, en Béarn, jusqu'au XIXe siècle. Selon le chercheur R.Coquerel, sur une aire de quelque deux mètres de diamètre et sur un sol argileux ou composé de petites pierres, on étendait une couche de paille bien sèche. Par-dessus, on éparpillait des branchages. Dessus encore, on étendait un manteau de fougères et plusieurs poteries à cuire. A nouveau une autre couche de fougères et encore une couche de poteries. Et ainsi de suite, pour former un cône. Puis on mettait le feu au tout. Une fois les pièces cuites, on couvrait le bûcher de cendres et de mottes de terre pour assurer un lent refroidissement.
