U seoskim domaćinstvima pršut se tradicionalno proizvodi od teških svinja (l50-200 kg) koje su uzgojene za vlastite potrebe, a danas je proizvodnja znatno proširena za potrebe turizma. Zadnjih 20-30 godina se uzgajaju pasmine bijelih mesnatih svinja poput velikog jorkšira (Large White), švedskog landrasa (Swedish Landrace), njemačkog landrasa (Dutch Landrace) te njihovih križanaca.

At local homesteads prosciutto-ham has been traditionally produced from heavy pork hogs (l50 - 200 kg) raised for one's own needs and today, production has considerably expanded to satisfy the needs of the growing tourist industry. In the last 20 - 30 years, white porker breed has been raised, such as the Large White, Swedish Landrace, Dutch Landrace and their half-breeds.

Traditionell wird der istrianische Rohschinken aus schweren Schweinen (150-200 kg) hergestellt, die auf Bauernhöfen mit privater Schweinezucht aufgezogen worden sind. Aufgrund des hohen Anwachsens der Touristenzahlen ist auch die Schinken Produktion in den letzten Jahren bedeutend angestiegen.
