Jede Freiburgerin und jeder Freiburger denkt beim Wort «Bénichon» (Kilbi oder «Chilbi» für die Deutschsprachigen) zuerst an ein herrliches Festessen, ein wahres Gelage, bei dem sämtliche Sorten Fleisch vom Hof auf den Tisch kommen: Rind, Schwein, Lamm in verschiedenen Zubereitungen und mit viel Gemüse als Beilage, davor eine Kraftbrühe oder Kohlsuppe, danach ein ganzer Reigen von Desserts.

"Bénichon" is to Fribourg what "Kilbi" is to German-speaking Switzerland. The term originally denoted a hearty feast in which the full range of farm produce was brought to the family table: a broth or perhaps a cabbage soup would be followed by several courses of beef, pork and mutton with plenty of vegetables and then an ample selection of desserts. "La Bénichon" later came to be associated with the finery of the ball and popular celebrations. When the barns are full of grain and the herds have come home, it is time for the village to celebrate, albeit with a tinge of sadness that the summer is over. With a few exceptions in certain places, "la Bénichon" is held on the second Sunday of September in the lowlands and the second Sunday of October in the mountains. It is also celebrated in the towns as lots of people come together, supermarkets sell regional produce, and restaurants throughout the region offer seasonal menus. While it comes in many forms all over the canton of Fribourg, they all have one thing in common: a highlight of the annual calendar for the whole family and the whole community to enjoy.

Pour tout Fribourgeois, le mot de « Bénichon » (ou « Chilbi » pour les germanophones) évoque d’abord un formidable gueuleton, un repas pantagruélique où défilent sur la table familiale toutes les viandes de la ferme: le bœuf, le cochon, et le mouton, en plusieurs apprêts, qui s’y voient précédés d’un bouillon ou d’une soupe aux choux, escortés de force légumes et suivis d’un kyrielle de desserts. La Bénichon est ensuite associée aux flonflons du bal et à la réjouissance populaire: lorsque les greniers sont pleins et les troupeaux rentrés, c’est fête au village. La fête certes, mais avec tout de même une pointe de mélancolie liée à l’arrivée de l’automne. Sauf particularités locales, la Bénichon a en effet lieu le 2e dimanche de septembre en plaine, et le 2e dimanche d’octobre en montagne. Elle se fête cependant en ville également, créant l’occasion de grands rassemblements, de déballage de produits régionaux dans les étals des supermarchés et d’une avalanche de menus de circonstance dans les restaurants de la région. Familiale, communautaire et calendaire – telles sont les trois dimensions d’une tradition aux multiples variantes, qui reste cependant commune à tout le pays fribourgeois.

Per tutti i friburghesi, l'espressione «Bénichon» (o «Kilbi» per i germanofoni) evoca anzitutto una formidabile scorpacciata, un pasto pantagruelico consumato in famiglia durante il quale vengono portati in tavola tutti i prodotti della cascina: il bue, il maiale, la pecora, in varie preparazioni, siano essi preceduti da un brodo o da una zuppa di cavolo, accompagnati da ortaggi e seguiti da una carrellata di dolci. La «Bénichon» è poi associata alle musiche ballabili e ai festeggiamenti popolari: quando i granai sono pieni e il bestiame nelle stalle, è festa al villaggio. Il tutto è condito da una punta di malinconia per l'arrivo dell'autunno. Particolarità locali a parte, la «Bénichon» si svolge la seconda domenica di settembre in pianura e la seconda domenica di ottobre in montagna. Si festeggia anche in città ed è l'occasione per riunirsi, per scoprire i prodotti regionali negli scaffali dei supermercati e una valanga di menù a tema nei ristoranti della regione. Familiare, conviviale e ricorrente – sono le tre dimensioni di una tradizione che si declina in vari modi pur restando comune a tutta la regione friburghese.
