In recent years, there has been a push towards higher nutritional standards and sustainable procurement, led by government schemes such as Appetite for Life in Wales, and projects like the English Food for Life partnership. These gains are now under threat from spending cuts, which could leave the school meal service reduced to its statutory minimum – a provider of free school meals for families on low incomes.

Adam York was one of the two founders at Unicorn Grocery Ltd,a l0,000ft² foodstore in Manchester. When he left for West Wales in 2010 Unicorn was taking £3.7m annually, £1m of which was from organic fresh produce sales. Adam led the Veg, Buying and Financial Teams for many years and with his partner started an offshoot business growing salads and leafy crops for the store. In his latter years he developed training systems within Unicorn to ensure a high level of retail skills across a multi-tasking, 50 strong, workforce.
