Da otto filari di questa parcella, con un approccio biodinamico, Filippo mette in pratica e poi in bottiglia un vino interprete della sua personale visione della vitivinicoltura.

2015 marked the first harvest of FICO, a 100% Sangiovese wine which takes its name from the fig tree on the boundary of the Gugliaie vineyard, one of the property’s finest piece of land. From these carefully chosen eight rows, taking a holistic bio-dynamic approach, Filippo put in to practice and subsequently bottled what is, in effect, an interpretation of his own personal vision of winemaking. This first harvest produced 280 numbered and organically certificated bottles, cementing this philosophy for the future of Principe Corsini winery, partner in the project.

In un’annata tardiva come la 2013, la qualità della vigna, la pazienza nella raccolta selettiva e la cura per il dettaglio in cantina hanno fatto la differenza. Così anche Zac assume tratti ancor più fini ed eleganti e la trama delle spezie regala al vino intensità e insieme giovinezza, in un profilo aromatico che si fa già complesso nell’armonizzare la susina rossa e le visciole con la leggera tostatura del legno.

In a late vintage like 2013, the quality of the vineyard, the patience in the selection of the bunches during the harvest and the care for every detail in the vinification, made the difference. Zac shows even more refined and elegant traits than usual. A spicy touch gives the wine intensity and youthfulness, in a complex aromatic profile, with notes of red plum, sour cherries and lightly toasted wood. On the palate the fine and smooth texture of the tannins benefit of the lively acidity of the fruit, with a finish of chalky, sapid and mentholated notes, and a persistence of liquorice root and black tea. The voice of a single vineyard, 10 hectares in the family hills of San Casciano in Val di Pesa, a century-old estate where Sangiovese grapes have unique strength and precision. The soul of this wine is in the details, with a rough character in a precise texture that widens in complexity with the evolution. Intense aromas vibrating in fragrant notes of dark cherries and plums, violets and dried roses, liquorice powder and myrtle leaf, with a fresh touch of fine spices. The palate is powerful and direct, with a crescendo in the mouth: a dry and warm body without excess of tannins, like a stretching muscle, defines a full and harmonious development. Pairing: Risotto with glazed quail and “Aceto Tradizionale” vinegar.
