In Florence in those years sprung up places where people met for appointments during the day or met by chance; pleasant places where even in the first years of the XVII century it was possible to taste the “cioccolatte” (milk chocolate), thanks to the Florentine merchant Francesco Carletti who had brought the chocolate from one of his long voyages to South America. For all the XVII century Florence - thanks to the flourishing mercantile activities - saw a great season in the culinary arts also because there were circulating recipes of food from other countries, above all French, English and Spanish. Foreign cooks were much prized among the most notable families - with a provincial restlessness to renew - finally adding French terms to Florentine preparations, even to causing great errors such as that of the “vitel tonè” (that can still be read today on many menùs) intending to give nobility to our vitello tonnato with a vaguely French expression and irony: in fact in French the exact translation is veau au thon.

A Firenze in questi anni fiorivano i locali in cui le persone si davano appuntamento durante il giorno o si incontravano casualmente; luoghi molto piacevoli in cui già dai primi anni del secolo XVII si poteva gustare il "cioccolatte", grazie al mercante fiorentino Francesco Carletti che aveva portato la cioccolata da uno dei suoi lunghi viaggi in Sud America. Per tutto il secolo XVII Firenze - grazie alle floride attività mercantili - visse una stagione di grandi fermenti nell'arte culinaria anche perché ormai circolavano ricette di cibi di altri paesi, soprattutto francesi, inglesi e spagnoli. I cuochi stranieri furono molto ricercati dalle famiglie più in vista e - con una provinciale smania di rinnovamento - si giunse perfino a denominare con termini francesi preparazioni fiorentine, anche a costo di grossolani errori come quello riservato al "vitel toné" (come ancora oggi si legge in molti menù) intendendo nobilitare il nostro vitello tonnato con un'espressione vagamente francesizzante ed erronea: infatti in francese la denominazione esatta è veau au thon.
