This salad made with fennel and orange is a delicate side dish that can be well combined with pot-roast or baked meat, typical of the holiday season. Even when your meat is a little fat, as it often happens. I've also served it in a particular starter with smoked herring and other fish and I found it delicious.

From Lyon, it’s just a 40-minute drive to the medieval town of Perouges. Admire the medieval city walls and spot the old churches spread around the town. If you have watched the Three Musketeers movie, you might recognise some of the buildings since much of the film was shot here.

Ann: I remember summer holidays on the archipelago off Stockholm. The whole family went out in a little motor boat to the island of Arholma, where we danced around the Midsommar Tree. After that we celebrated at our summer home with my grandparents. Saunas, swimming in the sea and a typical midsummer meal (herring, salmon, potatoes, strawberries, beer and schnapps), as has been served every year in the past, and still is today.

Dawn is the best time to go, because of the combination of customers: there are exhausted waiters, pale losers and glowing winners from the casino next door. There are business men, clerks, and blue collar workers on their way to work, there are the retired after a long sleepless night – they come from all directions and all classes, they come together out of the night and submerge in the soothing water to languish and dream, to startle awake, to be massaged. Then they leave the comforting womb, grab a snack of beer, sandwiches with herring or eggs, onions and mayonnaise with paprika, an espresso. And so, fortified, they begin another falsely promising day full of fatalism.

This time the recommendation is tops. The traveler keeps an excellent memory of "Dry House", Pastrana, at the junction of High Street and Casino Pastrana, one step away from the square of the Hour. From the road, you get in a hurry down the steep alley of the bulls. With a century of history behind it, the display of homemade gazpacho and tapas herring and potato omelette is well worth a stop. A portrait of the Princess of Eboli (that illustrated the events commemorating the fourth centenary of his death), confused walls full of bullfighting posters, Pastrana reminds the traveler who has not forgotten, four centuries later, its more illustrious neighbor. One more reason to ask for another mahou.

How many times have we read this in beguiling restaurant advertising? But you can’t take chances with raw fish and to enjoy sushi, sashimi, tartare, carpaccio and marinades a few precautions need to be taken. If we are eating out, the fish must be blast chilled in accordance with the law, namely frozen in a blast chiller that reduces its temperature rapidly to -18°C. If we are preparing it at home, we should freeze it for at least 96 hours in a three or more star-rated domestic freezer. The risk is that we will accidentally ingest the dreaded anisakis, a particularly obstinate parasite that blights species such as anchovies, sardines, herrings, sea bass, cod, monkfish and calamari, and in human beings provokes inflammations to the stomach and intestine and, in some cases, very serious allergic reactions.

A second region became commercially important during the 13th century. A confederation of German city-states known as the Hanseatic League conducted trade in commodities such as herring, timber, and salt in ports along the Baltic and North seas. Their commercial association grew out of a treaty concluded between Hamburg and Lübeck for mutual protection. When the Danish King Valdemar IV in 1362 seized the Baltic island of Gothland which included one of its largest ports, the Hanseatic merchants organized a trade boycott against Denmark. An alliance between these German cities and several princes forced the Danish king to withdraw from the island and eventually flee his country. The Hanseatic merchants gained a reputation for honest dealing at a fair price. They maintained “counters”, or trading ports, in such places as Bruges, which was a center of finely woven linens, and the Russian city of Novgorod. From London came wool; from Poland, grains; from northern Germany, timber, brewer’s yeast, and salt. For over three centuries, the rich “pepper-bags” or merchant traders of the Hanseatic League defended their commercial privileges. Relying on mutual advantage and trust more than force of arms, they became a powerful estate.
