This ancient cured meat (documents of 1170 talk about it) is obtained from the front shoulders of pork, raw-boned and steeped in aromas and herbs for 15 days. It is then tied, strictly by hand, assuming the appearance of a large sphere, which will then be aged for 25/30 days, and finally baked at a low temperature in water with red wine and vegetables for several hours.

Antico salume pregiato (sono stati trovati documenti che ne parlavano risalenti al 1170) ricavato dalla spalla anteriore del suino (scapola), disossata e fatta riposare cruda negli aromi e nelle droghe per 15 giorni per poi venire legata rigorosamente a mano assumendo l’aspetto di una grossa sfera, la quale verrà poi fatta stagionare per 25/30 giorni ed infine cotta a bassa temperatura in acqua insieme a vino rosso e verdure per varie ore. Questa lavorazione conferisce alla Spalla Cotta detta di “San Secondo” (paese della bassa parmense da dove trae origine), un profumo ed un aroma particolarmente delicato, specialmente se servita calda. Ottima come antipasto da sola o insieme ad altri salumi, accompagnata da pane casereccio caldo o con la classica torta fritta.
