THE PALMENTO takes its name from the Palmentum, or the ancient structure of Roman origin that was used to press grapes. This was situated in an ancient village (u chiazzeil) dating back to the period from 1780 to 1820 and was available to families who lived there. Inside the village (one of the few local tradition that was also fenced), everyone could take advantage of common goods such as the oven, the Stables, The Hague, the wells of water, and there was the opportunity to share moments of life and daily activities and seasonal. The millstone was the main point in this village site, a common rural building for the winemaking, where each family had its own capasoni and could operate for the production of their wines. Structurally within this large room stood a concrete pool, in which the grapes were crushed by the force of the stamping of feet, and from which, through a gutter, all the fruit of juicing was going to end in a tank, where began to ferment. You can count two environments that communicated by a court whose function was to take the juice to reduce it and produce cooked. The concentration of the wort was a very important step in that for the production of white wine permitted to avoid chemical additives. With the passing of the years many families who lived in the village have emigrated and the Grassi family bought the property (Borgo Sabatelli).
