The coffee used in Tom Green Summer Stout is both certified organic and Fair Trade Certified, roasted locally by Ottawa’s Bridgehead Roastery. It comes from the Piendamó region of Colombia, where a cooperative of about 1,000 very small farmers produce it. Ian Clark, Director of Coffee at Bridgehead, notes that there are relatively few producer associations in Columbia using organic and advanced sustainability practices, which he adds makes it a pleasure for them to bring this unusual coffee to Canada.
