The groups were taken to see the herd of traditional Hereford beef cattle on the farm and the flock of Llanwenog sheep. They learnt about how organic beef and lamb is produced from the farm's grassland, how it is processed by local Tregaron butchers and then sold to tourists and local people through farm gate sales.

The University benefits from its very own farm on site which allows the restaurants to source lamb and beef with arguably one of the shortest supply chains and lowest food miles for meat sourced on such a large scale. Their own greenhouses supply the kitchens with fresh salad and herbs to accompany the 1000 plus hot meals served every day at the University.

Fewer sheep are being reared in the UK compared to a decade ago. Supply is down and prices up. Meat processors are concerned that price rises will make lamb less affordable. According to the Meat Trades Journal, the price of conventional minced lamb is now £9.45 a kilo, up 21 per cent on the same week a year ago, when it was £7.83. Lamb chops have seen a jump of 11 per cent, with chops trading for £11.64 a kilo. The weak pound has encouraged farmers to export to France and the Middle East. One in three of all lambs reared so far this year have been exported.

A study by Cranfield University, commissioned by the environmental group WWF, suggests that vegetarianism may have disadvantages for the environment. Switching from beef and lamb reared in Britain to meat substitutes such as tofu would result in more foreign land being cultivated and raise the risk of forests being destroyed to create farmland. Meat substitutes also tend to be highly processed and involve energy-intensive production methods.

Roger has created a number of recipes utilising the whole range of cuts from a lamb carcass and even recommends utilising any excess of bones for stock to form the basis of a soup or broth. In addition he provides useful tips and insights into, for example, the difference between hill and lowland lamb. Despite the overall 1.5% dip across the UK, there are a number of positive trends happening in the Welsh organic sector. The Welsh Organic Producer Survey has revealed strong demand for organic meat, with sales of beef up by 32% and lamb up by 69% [for market ready lamb], as well as a 10.6% growth in sales of organic milk. Despite these figures, which were boosted by a number of Welsh farms completing their organic certification in 2011-12, there is a concern that the combination of pressure on organic feed prices and changes to support payments for organic farmers will force many of Wales's organic producers to revert back to non-organic production over the next few years.

  Cyhoeddi cyfraddau tali...
Yn ôl Tony Little, Canolfan Organig Cymru, 'Rydyn ni'n croesawu'r cyhoeddiad hwn. Mae'n golygu cynnydd sylweddol yn y taliadau cynnal i ffermwyr sydd yn y cynllun presennol. Mae'r adborth y mae'r Ganolfan Organig Cymru wedi'i dderbyn ynghylch lefelau'r taliadau hyn wedi bod yn gadarnhaol. Roedd y rhan fwya o ffermwyr yn y Cynllun Ffermio Organig ar hyn o bryd yn croesawu'r cynnydd yn y taliadau sydd wedi rhoi hwb i'w hyder o ran dal ati i ffermio'n organig. Am y tro cynta ers blynyddoedd lawer, rydyn ni hefyd wedi derbyn nifer bach o ymholiadau gan ffermwyr sy'n ystyried troi'n organig. Mae premiymau isel yn parhau'n destun pryder i gynhyrchwyr cig oen ac eidion ac er bod gwerthiant organig wedi cynyddu eleni, mae yna ansicrwydd o hyd ynglŷn â'r farchnad. Fodd bynnag, yn gyffredinol, mae'r cyhoeddiad wedi cael derbyniad da. Mae llawer o'r manylion heb fod ar gael eto, gan gynnwys, yn hollbwysig, union ddiffiniad 'tir pori garw' a'r gofynion cynllunio busnes, ond daw'r cwbl yn amlwg erbyn Sioe Frenhinol Cymru.
Tony Little from Organic Centre Wales said: 'We welcome this announcement. It means a significant increase in maintenance payments for farmers who are in the current scheme. The feedback that OCW has received has been positive. Most farmers currently in the OFS welcomed the increase in payments, which has boosted their confidence about continuing to farm organically. We have also received a small number of enquiries for farmers considering conversion for the first time in many years. Low premiums are still a concern for beef and lamb producers and although organic sales have increased this year uncertainties remain about the market, overall the announcement has been well received. Much of the detail is not yet available, crucially the precise definition of 'rough grazing' and the business planning requirements, but all will become clear by the Royal Welsh Show.'

Mae'r prisiau'n codi – i fyny 10-15c, ond yn debygol o lacio o ganol y mis tan ganol Ionawr cyn mynd yn fwy cadarn eto. Mae galw mawr am ŵyn stôr. O ran cig oen, daeth 2014 i ben gyda phrisiau rhwng 425 a 430c/kg. Siom felly yw adrodd am y 360c-375c/kg ar gyfer cig oen ar hyn o bryd.
Good and improving trade for organic finished lamb as numbers continue to go short not helped by the wet weather making fattening conditions very difficult. Prices are rising – up 10-15p, but likely to ease back from mid-month till mid-January, before firming again. Store lambs keenly wanted. For lamb, 2014 ended at 425-430p/kg. It is therefore disappointing to report present 360-375p/kg for lamb. It cannot be price alone that is putting off demand from processors?

Wrth i 2015 fynd yn ei flaen, dylai'r sail gynhyrchu sefydlog a'r farchnad gynyddol wireddu'r potensial am godiad yn y premiymau ar gyfer cig eidion ac oen, yn enwedig yn ystod pantiau tymhorol yn y cyflenwad megis diwedd y gwanwyn yn y sector cig oen.
As 2015 progresses the stable production base and growing market should realise the potential for increased premiums for beef and lamb, especially during seasonal troughs in supply such as late spring in the lamb sector. This would explain why producers in most sectors are optimistic about the future, although beef farmers were less so due to the pressure on beef prices in 2014.

Dangos adroddiad Cymdeithas y Pridd 2012 fod 83% o gartrefi yn prynu o leiaf rhywfaint o gynnyrch organig, tra bod 23c o bob punt yn cael eu gwario ar ffrwythau a llysiau a dyfir yn organig. Yn ychwanegol at gig oen organig (+16%), mae cig dofednod (+6.6%) a bwyd babanod (+5.8%) yn enghreifftiau eraill o gynnyrch organig sy'n gwerthu'n dda.
The 2012 Soil Association report showed that 83% of UK households buy at least some organic products, while 23p in every pound spent on fruit and vegetables goes on organically grown produce. In addition to organic lamb (+16%); poultry (+6.6%) and baby food (+5.8%) are other examples of organic lines that are performing well. The report also found that the growth in online sales of organic produce, through home delivery and box schemes, pumped an additional £11.2m into the UK market during 2011.

O'i gymharu â'r canlyniadau yn 2015, mae gwerthiant cig oen organig gorffenedig i fyny o 17%, o 120,000 i 140,000 pen, gwartheg organig gorffenedig i fyny 16%, o 5,000 i 5,800 pen, a gwerthiant llaeth organig i fyny 7%, o 56 i bron i 60 miliwn litr.
Compared with the 2015 results, organic finished lamb sales were up by 17%, from 120,000 to 140,000 head, organic finished cattle up by 16%, from 5,000 to 5,800 head, and organic milk sales up by 7%, from 56 to nearly 60 million litres. These increases are consistent with the 7% increase in UK retail market sales of organic food in 2016, showing the potential for Welsh producers to respond to growing domestic and export market opportunities.

“Mae cig oen Cymru, ac yn haeddiannol felly, yn cael ei gydnabod ar draws y byd am ei flas a'i ansawdd ac mae gwerthiant cig oen organig wedi saethu i fyny yn y DU yn y blynyddoedd diwethaf; felly roedd y dewis yn berffaith.
“We had to come up with something to top our 'talking leeks' from the first phase of the campaign, which really seemed to capture the public's imagination,” said Dafydd Owen from Organic Centre Wales. “Welsh lamb is quite rightly renowned across the world for taste and quality and sales of organic lamb have come back really strongly in the UK recent years.”

Mae rhai o frandiau bwyd blaenllaw Cymru, gan gynnwys cynhyrchwyr llaeth fel Rachel's a Calon Wen, yn defnyddio dulliau organig ac mae gwerthiant cig oen a dofednod organig wedi parhau i gynyddu, er gwaetha'r hinsawdd economaidd anodd.
Wales punches well above its weight in terms of organic production. Welsh farmers continue to allocate around 8% of all agricultural land for organic production – twice as much as the rest of the UK. Some of Wales's leading food brands, including dairy producers like Rachel's and Calon Wen, use organic methods and sales of organic lamb and poultry have continued to increase, despite the difficult economic times.

Rydym wedi cynyddu nifer y mannau gwerthu sydd ar gael i Gynhyrchwyr y Graig ar gyfer cig eidion a chig oen ac yn chwilio am fwy o gyflenwadau.
Cattle prices remain firm and the warmer weather is expected to increase demand for over thirty month cattle for minced beef and burgers as the BBQ season kicks off. Retail sales of under thirty month beef have been struggling but availability has fallen faster, keeping prices firm. We have received several leads for exporting beef to Europe, some from customers wanting to remove their reliance on South American organic imports. There is potential to produce significantly more organic beef in the UK as at present many cattle are losing their organic status at some point along the production route.
