Bouquet Nouveau е произведено по технология на "божоле нуво" - с въглекисела мацерация. Типично за тези вина е, че ферментацията се провежда на цяло грозде (непресовано). Гроздовите зърна се пълнят в съда, където се оставят, за да започне ферментацията.
Bouquet Nouveau is produced using the "Beaujolais Nouveau" technology with a carbonaceous maceration. Typical of these wines is that the fermentation is carried out on a whole grape (not pressed). Grape grains are filled into the container where they are left to start the fermentation. In this process the nipples burst and the juice is collected at the bottom of the vessel. It takes about 12 to 15 days. The wine is drained, sown for apple-lactic acid fermentation, then stabilized, filtered and bottled immediately to consume very young and fruity. As a result of the carbonaceous maceration, the wine has a pronounced fruity character, a light and elegant taste.
