Quien conozca mi carrera a lo largo de los últimos catorce años así lo habrá visto, yo empecé a formar parte de la historia del Restaurante y él de la mía, y según andábamos juntos, nos integrábamos más cada vez, y nos deshacíamos de banalidades, despojándonos de lo que no era necesario e imprescindible y quedándonos con lo esencial; hablo tanto a nivel cocina como sala, buscábamos la claridad. No obedece ello a la tendencia del minimalismo, tan en boga, sino más bien yo diría sencillez; sencillez que me ilusiona y a veces me aterra, o más bien me asusta el que no se entienda; sencillez y simplicidad no es lo mismo, esencialismo y como en la definición de mi página, estilismo?, eso sí es la línea a seguir; Maite, Alfredo, Marcelo, Josiño...a todos ellos tengo que agradecer su compañía en este viaje, a mis Padres, a mis Hermanos, a José, a Lourdes... al fin y al cabo también nos debemos a nuestro entorno, el paisaje, la despensa y el hombre, ellos también comparten y forman nuestro universo particular, el cual vamos moldeando y a la vez nos moldea a nosotros mismos."

Kanona sarakstu veidošanas process bija gana sarežģīts. Nozaru eksperti daudz diskutēja savā starpā, reizēm samērā grūti nonākot līdz izpratnei par kopīgi formulējamām vērtībām. Tas ir labi, jo šķiet, ka tieši šīs diskusijas ir bijušas pats svētīgākais, kas rosināja domas sarežģītās izvērtēšanas virzienā.
